Disconnected Shadows

A barrel-aged, mixed-fermentation wild ale showcasing the transformative character of Brettanomyces yeast. Selected from DEYA's cellar for its moderate acidity and fruity Brett character, the beer was dry-hopped with Nelson Sauvin and Citra, triggering a four-week refermentation. Fresh lemon, gooseberry and grapefruit aromas combine with green apple-like acidity and subtle funk. As the beer matures, Brettanomyces is expected to enhance the hop character, developing notes of pineapple and ripe tropical fruit.
