An oak-aged mixed-fermentation Saison fermented in an open-top fermenter before spending 12 months in oak barrels. Inspired by the Dark ’n Stormy cocktail, fresh ginger, lime and Cornish smoked sea salt are complemented by a light Motueka dry hop, with Brettanomyces used for bottle conditioning.
