
Scatterlings is a small brewery based on a working farm in Virginia Water, Surrey, specialising in easy-drinking mixed-fermentation saisons. Using mostly British ingredients, mixed cultures and long maturation in French oak barrels, its beers develop a distinctive balance of gentle bitterness, acidity and tartness.
Brewery story
Scatterlings Brewery began in Virginia Water in 2025 with a focus on producing balanced, approachable saisons using mostly British ingredients and traditional techniques. Based on a working farm in Surrey, the brewery takes a deliberately slow approach to production, creating beers intended to be distinctive without sacrificing drinkability.
Each beer begins in an open fermenter using a mixed culture of wild and domesticated yeast alongside lactic acid-producing bacteria. After undergoing several stages of fermentation, the beer spends at least 12 months maturing in French oak barrels, allowing its bitterness to soften and acidity to gradually develop into the characteristic tartness of Scatterlings' beers.
Once suitable barrels have been selected and blended, the beer is transferred to a blending tank and typically receives a small dry hop for additional aroma. Cane sugar and fresh mixed culture are then added before packaging into 750ml green bottles and kegs, where a final fermentation takes place. The packaged beer rests for a further three to six months before release, making each batch a lengthy and carefully considered process.
