Independent Oxfordshire craft brewery founded in 2017 at Westfield Farm near Cholsey. Housed in an 18th-century timber-framed barn, Amwell Springs produces small-batch beers using natural spring water filtered through the chalk hills of the Berkshire and Oxfordshire Downs. Led by head brewer Andrew Gibbons, the brewery combines English malts, international hops and sustainable farming practices.
Brewery story
Amwell Springs Brew Co. was established in the summer of 2017 at Westfield Farm near Cholsey, South Oxfordshire. Inspired by a passion for exceptional beer and the natural spring running through the farm, the brewery began with a modest 70-litre brewing plant. Its home is an 18th-century timber-framed cart hovel, part of a family farm where wheat and barley have been cultivated for more than six decades. The combination of agricultural heritage and access to remarkable spring water provided the foundation for a distinctive local brewery.
The brewery takes its name from the Amwell Springs, whose water is naturally filtered through the chalk hills of the Berkshire and Oxfordshire Downs. With the spring head just a short distance from the brewhouse, Amwell Springs can brew using water that requires no chlorine or fluoride treatment and minimal transportation. In 2019, the brewery expanded to a six-barrel plant, allowing production to grow while maintaining its emphasis on carefully crafted, flavourful beers.
Head brewer Andrew 'Gibbo' Gibbons approaches brewing with a focus on balance, precision and consistency. Combining English malts with carefully selected traditional and modern hops from around the world, he aims to create beers in which no single ingredient overwhelms the others. Sustainability is equally important: spent grain is used as feed for local livestock, yeast is harvested for reuse and discarded hops are composted, connecting the brewing process with the surrounding farm and countryside.
In spring 2022, Amwell Springs opened an outdoor pop-up bar and brewery shop, giving visitors the opportunity to enjoy its beers beneath mature ash trees beside the spring that makes them possible. The venue has hosted local food vendors and offered cask, bottled and canned beers, as well as cider and wine. Although no further public opening dates are currently advertised, the outdoor space remains available for private events. From its historic barn to its naturally sourced brewing water, Amwell Springs continues to celebrate the relationship between farming, sustainability and independent beer.
