About Vault City Brewing
Founded in Edinburgh in 2018, Vault City Brewing set out to redefine sour beer by making the style accessible, vibrant and packed with flavour. The brewery quickly established itself as one of the UK's leading independent producers of modern sour beer, building a reputation for constant innovation and limited-edition releases.
Brewing more than 450 different beers since launch, Vault City has become the UK's largest dedicated sour beer brewery. Its beers span a wide spectrum of flavours, from gently tart fruit sours to intensely sour creations, alongside pastry stouts and experimental styles that continue to push brewing boundaries.
Fruit is central to Vault City's brewing philosophy, with the brewery using more than 200,000kg of fruit each year to create bold, natural flavours. Traditional mixed fermentation techniques are combined with modern brewing practices to produce beers celebrated for their balance, drinkability and distinctive character.

Visit The Wee Vault
The Wee Vault is Vault City Brewing's cosy taproom and bottle shop in Edinburgh's Haymarket. Despite its intimate size, it features 24 rotating taps pouring the latest Vault City releases alongside carefully selected guest beers, meads and ciders. Visitors can enjoy beers by the third or schooner, browse takeaway bottles and cans, and relax in a welcoming, dog-friendly space with vegan options and snacks available.
