A Measure Of What We've Lost

A spontaneously fermented wild ale aged for two years with chuckleberries, lavender and vanilla. Using traditional carbonic maceration techniques, 2.5 tonnes of chuckleberries were gently broken down and co-fermented with 2,500 litres of wild ale in a foudre. Bright citrus, floral lavender and peppery aromas lead into flavours of fresh berries, redcurrants and sweet citrus. Smooth, refreshing acidity is elegantly rounded by vanilla, creating a complex, delicate and beautifully balanced wild beer.
