A spontaneously fermented pale wheat beer matured for 11 months in neutral French oak before spending a further six months in freshly emptied rum barrels. Coconut, pineapple and vanilla lead into spice, lime and caramel with restrained acidity, a creamy mouthfeel and long, dry finish.
