An elegant and expressive Wild Ale from Gloucestershire's Mills Brewing, showcasing the distinctive character of native flor yeast through spontaneous fermentation and barrel ageing. Brewed with a simple combination of very pale barley and wheat, Flor receives a single addition of fresh hops during the boil, providing a clean, precise bitterness without overshadowing the fermentation character. Spontaneously fermented in two old Tom Oliver cider barrels, the beer develops delicate almond, herbal, apple and savoury aromas from its native flor yeast. Restrained malt and hop contributions, together with low acidity, allow these complex fermentation-derived flavours to take centre stage. At 7.2% ABV, this refined wild ale offers a distinctive drinking experience, with its aromatic complexity continuing to evolve through further maturation in the bottle.
