An exceptional single-barrel Wild Ale from Gloucestershire's Mills Brewing, showcasing the complexity of spontaneous fermentation and traditional barrel ageing. Sorachi Brut begins with a simple grist of Pilsner and wheat malts, generously hopped with Columbus and Sorachi Ace to create a bitter, intensely aromatic wort. The beer underwent spontaneous fermentation in white Burgundy barrels, with one particularly outstanding barrel selected for individual bottling rather than blending. Refermented in the bottle exclusively with wild yeasts, it develops natural carbonation while preserving the distinctive character of its fermentation and maturation. At 9.4% ABV, this powerful Belgian-inspired wild ale celebrates the expressive interplay of hops, wild yeast and barrel ageing in a rare 750ml release.
