Brewery story
Mills Brewing was founded in Gloucestershire in 2015 by Genevieve and Jonny Mills with the ambition of producing beers inspired by the great spontaneously fermented breweries of Belgium while expressing the unique character of the English countryside. From the outset, the brewery embraced traditional brewing methods, relying on local wild yeast, bacteria and time rather than modern intervention to shape each beer.
Every batch begins with traditionally floor-malted grain and whole-leaf hops before being transferred into wooden barrels, where fermentation takes place naturally using indigenous microflora. Rather than controlling temperature or introducing cultured yeast, the brewery welcomes seasonal changes and allows each barrel to develop its own personality over two to four years of slow maturation.
Blending sits at the heart of the brewing process. Individual barrels are carefully selected and combined to create balance, complexity and depth, with every beer undergoing further bottle conditioning for several months before release. This patient approach means no two barrels are identical, allowing nature to play an active role in shaping every vintage.
What began in a former timber yard has grown into one of Britain's most respected mixed-fermentation breweries, while remaining proudly independent and intentionally small. Today, Mills Brewing continues to produce limited quantities of barrel-aged beers from its brewery and taproom at Griffin Mill in Stroud, with every bottle featuring distinctive artwork created by Genevieve's father, Martin Kaye.
