A vibrant and complex cocktail-inspired Kettle Sour from Edinburgh's Stewart Brewing, created as part of the brewery's experimental Project 7 series. Inspired by the classic Gooseberry and Elderflower Gin Fizz, this distinctive beer combines a lager and wheat malt foundation with a carefully developed souring and fermentation process. The base is soured using Lactobacillus plantarum before fermentation with gooseberry juice, elderflowers and juniper berries, introducing an expressive combination of tart fruit, delicate floral sweetness and subtle botanical complexity. Saison and champagne yeast strains are used together during fermentation, contributing to the beer's distinctive dry and layered finish. At 5.6% ABV, Gooseberry & Elderflower Fizz balances refreshing acidity with a gently sweet floral character, delivering an imaginative and sophisticated interpretation of a modern fruit sour.
