Independent Dorset craft brewery led by Alex Ferris, originally based in Corton Denham before relocating to Patson Hill Farm near Sherborne in 2024. Operating a modern 25-hectolitre brewhouse, Apex produces bold, flavour-packed beers using carefully selected British and international ingredients. All beers are unfiltered, unfined and unpasteurised. Its onsite Tap Yard opened in 2026, and brewery tours are available.
Brewery story
Apex Brewing Co. began as a homebrewing passion project that gradually developed into an ambitious independent craft brewery in the Dorset and Somerset countryside. Originally operating from Corton Denham, Apex built its identity around a straightforward philosophy: brew beer worth coming back to. Rather than chasing trends for their own sake, the brewery focuses on producing distinctive, flavourful beers that showcase quality ingredients and careful brewing techniques.
In 2024, Apex relocated to Patson Hill Farm near Sherborne, Dorset, moving into a purpose-built 25-hectolitre brewing facility designed to support its expansion. The larger brewhouse provided greater capacity while allowing the team to maintain its commitment to quality and consistency. Led by managing director and executive brewer Alex Ferris, alongside head brewer Tom Scrancher, the brewery has developed a team covering production, research and development, design and hospitality.
Apex's brewing philosophy centres on preserving the natural character of its ingredients. Using carefully selected barley, grains and hops, much of it sourced from Britain, the brewery creates bold, often hazy beers without filtering, finings or pasteurisation. This approach retains the flavour and texture developed during brewing, resulting in beers that reflect the character of their ingredients. With dedicated brewing and research roles, the team continues to explore new recipes while remaining focused on producing beer that people want to drink again.
The opening of Tap Yard at Apex Brewery in 2026 marked another important chapter, giving visitors a place to enjoy the brewery's beers directly at Patson Hill Farm. The brewery also offers guided tours, providing an opportunity to explore the production process and discover the thinking behind its beers. From its homebrewing beginnings to its modern rural brewhouse, Apex has grown while maintaining a strong emphasis on craftsmanship, community and independent brewing.
