A beautifully layered 6% mixed-fermentation Wild Ale from Balance Brewing & Blending, blending two barrels originally brewed in March and July 2022. Fermented with Saison yeast, Lactobacillus and Brettanomyces, then aged for four months on carbonically macerated British damsons, Jam 2023 delivers bright cranberry-like acidity and rich hedgerow berry flavours. Notes of ripe plum, marzipan and vanilla complement its textured body, while fruit and wood tannins create depth. Subtle funk leads into a lingering finish of damson skins and satisfying woody character.
