Beneath the Remains

A mixed-fermentation golden sour brewed in collaboration with DMC Brewery. A Brettanomyces-fermented golden sour base was conditioned with freshly pressed ginger juice, extracted from approximately 100kg of ginger root. Delicate ginger spice and fragrant aromatics complement the house culture's bright citrus and stone fruit character, creating a layered and refreshing sour beer.
