About Holy Goat Brewing
Holy Goat is a Dundee-based brewery built around a fascination with mixed fermentation, wild yeast and the distinctive flavours that develop through extended maturation.
Rather than relying solely on conventional brewing yeast, the brewery uses a proprietary fermentation method centred on Brettanomyces. Its beers typically mature for three to four months, giving the yeast and supporting cultures time to develop layers of fruit, acidity, funk and depth.
Mixed fermentation allows Holy Goat to work with unconventional yeasts and bacteria, producing beers with a character that cannot be achieved through standard fermentation alone. Experimentation sits at the heart of the brewery, with each release exploring the possibilities of mixed cultures, wood ageing and carefully selected ingredients.
Although its approach is adventurous, Holy Goat also draws heavily from brewing tradition. Old techniques are combined with modern ideas to create beers that are complex and unusual without losing sight of drinkability and flavour.
The name Holy Goat is a playful reference to the sometimes goat-like characteristics associated with Brettanomyces. That reverence for wild yeast, and for the distinctive beers it can produce, has become central to the brewery's identity.
