A complex 5.8% spontaneously fermented Wild Ale from Mills Brewing, patiently matured in Marsala wine barrels for three years. Originally brewed in July 2023, Marsala begins with a light red wort made from crystal and caramel malts, complemented by aged New World hops chosen for their fruit character rather than bitterness. Slow fermentation and regular stirring of the lees develop texture and depth, while extended wine barrel maturation shapes this distinctive farmhouse-inspired beer. A carefully crafted expression of traditional spontaneous fermentation and patient barrel ageing.
