Brewery story
Beyond Belief Brewing Co. was founded in 2021 by Freddie, Benn and Charlie, bringing together their experience in the food industry with a shared passion for sustainability and craft beer. Having witnessed the scale of food waste generated by manufacturers, farms, restaurants and other businesses, the founders began exploring ways to transform ingredients that would otherwise be discarded into products suitable for human consumption. Their breakthrough came through experimenting with surplus pasta as an alternative source of fermentable sugars in beer production. Despite scepticism about whether pasta could successfully replace part of the traditional malt bill, their early brewing experiments demonstrated that it was possible to create enjoyable beer using ingredients previously considered unsuitable for brewing.
Building on this discovery, Beyond Belief developed a specialist brewing process capable of converting a wide range of surplus starchy foods into fermentable sugars. The company subsequently secured patents covering its approach, with three granted UK patents and another UK application pending according to its published information. Rather than limiting production to pasta, the team expanded its experiments to include bread, chocolate brownies, fondant fancies and other surplus ingredients. Some ingredients are used to replace a proportion of malted barley, while others provide distinctive flavours. This flexibility allows Beyond Belief to produce a variety of beer styles, from lagers and IPAs to stouts, while challenging conventional assumptions about which ingredients can be used in brewing.
Sustainability is central to Beyond Belief's brewing philosophy. The company works with food producers, manufacturers, farms and hospitality businesses to identify surplus ingredients that would otherwise go to waste. Each ingredient is assessed for safety, quality and suitability before being incorporated into a brewing recipe. The company aims to preserve the value of surplus food by using it for human consumption rather than directing it towards lower-value applications. Its published process describes using approximately 450 kilograms of surplus ingredients within the base malt of a 3,000-litre brew, or around 200 kilograms when surplus is used primarily for flavouring. The team also works with suppliers to maintain traceability and verify that rescued ingredients represent genuine food waste rather than creating additional demand.
Beyond Belief has developed its brewing approach through collaborations with breweries in the United Kingdom and internationally, including partners in Slovenia and Ghana. Its beers demonstrate how unconventional ingredients can contribute to familiar and experimental styles without compromising flavour. The company also measures the environmental impact of its approach, reporting the quantities of surplus ingredients rescued alongside estimated carbon and water savings compared with conventional brewing methods. Its wider mission is to encourage producers and consumers to reconsider the potential of surplus food, showing that ingredients destined for disposal can instead become valuable resources. Through scientific experimentation, brewing partnerships and an emphasis on sustainability, Beyond Belief continues to explore new possibilities for reducing food waste through beer.
