IVO Brewery

IVO Brewery was founded in January 2020 by Charlie Abbott and Jason Jones, two friends and neighbours living in Somersham, Cambridgeshire. Both were already accomplished homebrewers when they decided to turn their shared passion for beer into an independent brewing business. Their ambition was simple: to produce beers they would genuinely want to buy and drink themselves. Rather than chasing trends, the founders established a brewing philosophy centred on flavour, quality and creating beers that remain faithful to their individual styles. This practical, enthusiast-led approach became the foundation of IVO's identity.

Drawing on their homebrewing experience, Charlie and Jason developed a range of beers that balanced traditional brewing principles with opportunities for experimentation. From the outset, they committed to producing beers that were entirely vegan, using natural fining methods rather than animal-derived ingredients. Their emphasis on true-to-style brewing meant concentrating on the characteristics that define each beer, while ensuring that flavour remained the priority. As the business developed, IVO established a core range complemented by occasional releases and beers brewed in response to customer demand.

A significant milestone arrived in 2025 when IVO commissioned a new brewery at Burleigh Hill Farm on Somersham Road, just outside St Ives. The facility provided an expanded brewing capacity of ten hectolitres, approximately 1,000 litres per batch, allowing the founders to increase production while maintaining their small-brewery approach. The move represented an important step forward from their homebrewing origins, providing dedicated equipment and facilities for commercial beer production. Depending on the style, IVO's beers are produced in bottle-conditioned, cask and keg formats, allowing them to reach drinkers through different traditional and modern serving methods.

Today, IVO Brewery continues to build on the principles established by its founders in 2020. Its beers remain naturally fined, completely vegan and focused on delivering the flavours expected of their respective styles. The combination of a dependable core range and occasional special releases gives Charlie and Jason opportunities to refine established recipes while exploring new ideas. With production now based at Burleigh Hill Farm, the brewery has also outlined plans for a future taproom, although no public venue has yet been confirmed as operational. IVO remains a small independent brewery shaped by friendship, homebrewing experience and a shared commitment to making great-tasting beer.
