Pastore Brewing & Blending

Pastore Brewing & Blending was founded in Waterbeach, Cambridgeshire in 2019 by Ben and Chris, born from a shared love of sour and wild beers from both old-world brewing traditions and the modern craft beer movement. The name Pastore, pronounced Pas-tor-ray, is Italian for shepherd and was chosen in honour of the brewer's Italian family, connecting the brewery's heritage with its approach to rustic and wild brewing.

Pastore specialises in innovative fresh, fruited sour beers inspired by traditional styles such as Berliner Weisse and Gose, alongside more modern interpretations including pastry sours and sour IPAs. Its sours are fermented using a house mixed culture of Kveik and Lactobacillus and high-quality fruit, creating the balance of fresh fruit flavour and lively lactic acidity for which the brewery has become known. Pastore also produces longer-aged beers, including barrel-aged saisons, while all of its sours are lactose-free and vegan-friendly.

More recently, Pastore has expanded beyond its sour-beer roots to produce speciality lagers, IPAs and stouts. These beers retain the brewery's experimental approach, combining inspiration from historic brewing with modern techniques and distinctive ingredients. Creations have included a rice lager co-fermented with sake kasu, a West Coast IPA bittered with gentian root and oat stouts inspired by classic Italian flavours such as pistachio and amaretto.

From its brewery and taproom in Waterbeach, Pastore continues to explore the boundaries between traditional and contemporary brewing. Its beers can be found in independent bottle shops, bars and pubs across the UK, with the brewery remaining particularly recognised for its modern approach to mixed-fermentation, fruit-forward and wild beer.
