Brewery story
Field & Theory Brewing Co. was established in 2025 by Will Twomey, an experienced brewer who previously served as Head Brewer at Renegade Brewery. Based at Mayfield Farm in Compton, near Newbury, the independent brewery draws on decades of experience across brewing and hospitality. Its philosophy centres on thoughtful beer production, combining respect for traditional methods with an understanding of how beer brings people together. Rather than chasing trends, Field & Theory aims to create beers that feel familiar, balanced and suited to everyday enjoyment.
The brewery uses traditional square fermenters to produce a focused range of ales available in cask and can. Its approach places particular emphasis on balance, restraint and drinkability, with beers designed to be enjoyed over conversation and shared occasions. Inspired by time outdoors and the surrounding countryside, Field & Theory values consistency and careful decision-making throughout the brewing process. The brewery's identity reflects a belief that quality comes from attention to detail, patience and a willingness to let well-made beer speak for itself.
At Mayfield Farm, Field & Theory has established a small onsite shop where customers can purchase beers directly from the brewery or collect orders placed online. The site also offers visitors an opportunity to see the brewery, although a dedicated public taproom remains in development. This direct connection with customers reflects the business's commitment to its local community and its ambition to create a welcoming place around its beers.
Looking ahead, Field & Theory intends to grow at a considered pace while remaining true to its founding principles. Will Twomey's experience and appreciation of traditional brewing provide the foundation for a business focused on longevity rather than rapid expansion. Through carefully produced ales, local connections and plans for a future taproom, the brewery aims to establish a lasting presence in Berkshire's independent brewing scene.
