
Polly's Brew Co is an award-winning independent brewery based near Mold in North Wales, renowned for producing modern hop-forward beers inspired by the New England IPA movement. Brewery story
Polly's Brew Co traces its roots to Holland Farm near Mold, where the brewery takes its name from Polly, the Wheldon family's horse that once occupied the stable which became the brewery's original home. Founder Sean initially operated a small cask brewery before returning to the drawing board with a new vision centred on the vibrant, hop-forward beers emerging from the United States.
That vision became reality in January 2018 when Loka Polly was founded by Sean and Arron as a two-person operation dedicated to brewing fresh, modern beer. Demand grew rapidly, leading to a move into a larger brewhouse in 2019 and steady expansion of both production capacity and the brewing team. Throughout this growth, the brewery remained focused on continually improving its recipes rather than simply increasing output.
Despite the challenges of the pandemic, Polly's used the period to refine its brewing techniques and strengthen the quality of its beers, helping establish the brewery as one of Wales' highest-rated producers. Continued collaborations with leading breweries, international festival appearances and exports to more than 30 countries further cemented its reputation. Today, Polly's operates a modern brewery capable of brewing multiple times each week, while remaining committed to innovation, staff development and producing some of the UK's most sought-after hop-forward beers.
